About Tim, our winemaker

My winemaking journey began in 2001 in the Yarra Valley at a boutique little winery called Tarrawarra. This experience led me to enroll at Charles Sturt University where I studied Winegrowing. During the 2003 vintage I had the opportunity to do a northern hemisphere vintage in Barolo, Italy, which truly ignited passion for viticulture and winemaking. After that I moved to the Mornington Peninsula, where the extreme maritime climate aligned perfectly with my love for the ocean lifestyle.

After 21 vintages, including 11 years as a head winemaker, I knew it was time to start my own label. So, in 2020, I founded Stilvi Wines - a project close to my heart and a true father - daughter collaboration. My teenage daughter, Kalypso, whose Greek heritage runs deep, creates the stunning artwork for each of our labels , adding her unique touch to every bottle. We chose the name Stilvi, meaning “shimmering light” in Greek, to reflect both her heritage and the vision behind the wines.

After 22 years of conventional winemaking, I was inspired by the bolder and unconventional styles of Georgia, Slovenia, and Friuli, which led me to explore amber (orange) wines - unfiltered, un - fined and wild! These wines break the rules and embrace authenticity in a wine world that often plays it safe. Opening a bottle of Stilvi is all about embracing that spirit of low - fi, daring, and unapologetically different!
